A canang sari on Bali's doorsteps, every day

Even at Tanah Lot, Uluwatu and the palace in central Ubud, where the crowds are biggest, the day's offerings sit outside the shops.

Canang sari is a small square tray folded from coconut leaf, holding a few petals, a pinch of rice and a stick of incense, sprinkled with water as it is set down. Balinese Hindu households and shops lay them out every day, in front of doors, beside stalls and on stone steps, many of them on the ground where people walk.

Tanah Lot on its rock in the sea, Uluwatu on its clifftop and the palace and market in central Ubud draw the biggest crowds, and the day's offerings still sit outside the shops there. Entering a temple means wearing a sarong and a sash, visitors included, and many temples lend or rent them at the gate.

Frangipani grows in temple grounds and house courtyards across the island, and its white, yellow-centered flowers are among the most common in offerings.

Balinese sate lilit is not skewered. Lilit means 'to wrap around' in Balinese and Indonesian: minced pork, fish or chicken is mixed with grated coconut, coconut milk, citrus juice, shallots and pepper, then pressed around a flat, wide stick of bamboo, sugar cane or lemongrass and grilled.

Pasar Badung is the largest traditional market in Denpasar and is open around the clock. From 3pm until 6am it is a night market for clothes and cooked food. From about 5am to 5pm the stalls sell spices, fruit, vegetables, meat and fish, and the flowers and coconut leaves that go into offerings.
